Sambal Tzatkziki Sauce

Makes 4 cups



Place cucumbers in colander and toss with salt. Reserve for 30 minutes. After 30 minutes rinse with cold water and allow to drain for 5 minutes. Place cucumbers in a bowl and combine remaining ingredients. Mix and season to taste. I enjoy this with roasted or grilled vegetables, seafood, meats, or just fried pita.
